Are you ready for Thanksgiving?
I absolutely adore Thanksgiving but it can also be exhausting…especially if you’re the one cooking. I thought I’d pass on a really easy dessert recipe you could include in your Thanksgiving menu. It’s super easy & always gets gobbled up (pun intended). It’s a really complicated artistic name. It’s called Pumpkin Dessert. Can’t get any more refined than that, huh?
I’ve been making this dessert for over 6 years and you may have seen it before but I thought it’d be fun to change it up a bit.
Usually you make this in a casserole dish but I thought it’d be fun bake it in individual-sized glass jars. If the ones in the above picture are too large, you could use jelly jars.
Here’s what you need to gather:
Glass jars (or 9×10 glass dish)
Yellow Cake Mix
Can of Pumpkin
Butter
Milk
Eggs
Pumpkin pie spice
Cinnamon
Sugar
1) Set aside 1 cup of cake mix
2) Mix the rest of the cake mix with 1 egg and 1 melted stick of butter
3) Press dough mixture into greased jar or glass dish.
4) Add together 2 cups pumpkin, 2/3 cups milk, 1 cup sugar, 2 eggs, 1 1/2 tsp pumpkin pie spice
5) Add pumpkin mixture on top of the cake layer.
6) Add 1 cup cake mix (reserved), 1/4 cup sugar, 1/4 tsp cinnamon and 1/4 stick soft butter. Sprinkle on top of the other two layers.
In order to bake the pumpkin dessert in the jars, you need to bake them in a pan with water. Fill the pan 1/2 to 2/3 with hot water.
7) Bake at 350 degrees for 45-50 minutes.

I am wondering if this will work with some small mason jars (like jelly size). I have some of those but don’t have any of these jars.

Angie…oh yes…in fact, I think that would be the ideal jar. I wanted to do it in a jelly size jar but didn’t have any on hand. If I’m totally honest, I’m a little selfish when it comes to the pumpkin dessert. The bigger the serving, the better. ;p <3 Heidi Rew

Beatrix…I’d start it at 30 minutes & see how that goes. These jars are larger than jelly jars so start with that & see how it works. Hope this helps! <3 Heidi
