Hope you have/had a great Thanksgiving!
Can I just tell you that I am so thankful for YOU! I am thankful for every post you read, every time you share Parties for Pennies with someone else, every facebook like, every comment, every email and every story you tell me. Parties for Pennies began because I honestly adore throwing parties and creating moments. I don’t make any money from my blog. I actually lose money. I am not telling you that to pity me…PLEASE do not. I am telling you that because I do this blog because I absolutely adore it. I spend so much time..too much time on this blog because I just LOVE it. All that to say…every time you comment or read a post it means the world to me because I’m sharing my love with you. I guess it’s kinda like that indie band that you think could blow the socks off anyone on the radio and when you find a few friends that fall in love with the band as well…it just creates a cool bond. So thank you! I simply adore you.

So I love me some Thanksgiving leftovers but I’ll be completely honest this is how my leftover meals go:
Breakfast: Sweet Potato Casserole
Lunch: Sweet Potato Casserole & maybe some green beans
Dinner: Sweet Potato Casserole and Pumpkin dessert
No wonder I feel flubby after Thanksgiving. ;p
If you have Thanksgiving leftovers, why not make this Thanksgiving Leftover Recipe.
Here’s what you need to gather:
Turkey, Mashed potatos, Corn, Green Beans, Carrots, Onion, Gravy and whatever seasoning you prefer.
Start by sauteing 1/4 – 1/2 chopped onion.
Add the carrots, green beans, corn, turkey (chopped), sauted onions and at least a cup of gravy. Start with 1/2 cup of gravy and slowly add more to your liking.
I added some garlic powder and pepper. It didn’t need any salt. It was already pretty salty.
Top with mashed potatoes. If the potatoes are a little dry, add some sour cream or a little milk.
Bake at 400 degrees for 30 minutes.
Voila…Turkey Day Leftover Casserole
The great thing about this is that if you’re turkeyed-out, you can freeze it for a quick dinner for one of those busy holiday nights.
