Hey party people!
Hope your New Year has started off well!
Here in Atlanta, 2013 has started off cold and rainy. Something that can turn a rainy day frown upside down? Hot, belly-warming soup!
This past weekend, my family came over for a little Christmas extension. My sister, as you may know from previous posts, is getting married this year. Her fiance is from Minnesota so she spent Christmas in a winter wonderland, visiting his family. Did you know that her brother-in-law built an ice hockey rink in his back yard?? To this little Hotlanta-Georgia girl that is crazyyyy…but super cool.
All that to say, we wanted to have a Christmas celebration with my sister and David (her fiance). Instead of doing the traditional Christmas meal, I suggested a SOUP SWAP.
With all the delicious meals and baked goods this season, my kitchen has had quite the workout and so have I. I honestly wanted something easy and something that would allow me to take a couple days off from cooking.
The Soup Swap rules are as follows:
– Each person/family bring one type of soup
– Make enough soup to feed everyone and then some. (I doubled my recipe)
– Bring 2 to-go containers the night of the Soup Swap
– Each person agrees to bring one of these, as well: Salad, Bread or Dessert
For our Soup Swap, we had three different kinds of soups to choose from: Curry Chicken, Vegetable, and Chicken Chili. Once everyone had warmed their bellies, we all loaded up the to-go containers (if you bring your soup in a crock-pot, bring 3 to-go containers) with a little of each of the soups. You can freeze your soups for a quick meal later or have meals for a couple of days.
I loved the fact that not only did I have leftovers but I had a variety of leftovers. Once you’ve had ham or turkey every day for 4 days straight, your taste buds get all squirrly and ADD-like, jumping at any other food suggestion.(Taste buds, when opening the fridge: “She’s reaching for the ham…again. Grab the mayo instead. Yes. Plain mayo. Sounds delish. No. Wait. Parmesan cheese. Oh yeah. Just pour that baby into my mouth. Just NOT the ham, again”)
A SOUP SWAP is a perfect cozy get together idea, great for families or just a casual dinner party. After a season of shindigs and entertaining, it’s nice to enjoy a relaxed event that comes with benefits (Party with Benefits, I like that).
It’s also a great opportunity to try different soups. Here are the recipes for Chicken Chili and Curry Chicken soup. I’m waiting to hear back from my sister on the recipe she used for her vegetable soup.
I don’t think my mom doubled this recipe but it still made enough for leftovers.
