Hey party people!
A few weeks ago, we hosted a little 4th of July party at our house. I knew there would be kids attending so I thought it would be fun to make some homemade ice cream sandwiches.
They were a HIT!
They’re really easy to make & turn out beautifully.
First, make sure you have these ingredients…
Vanilla Ice Cream
Waffle Cookies (I got mine at Cost Plus World Market)
Chocolate Shell
Sprinkles
Start off by laying one of your cookies on wax/parchment paper.
Let the ice cream sit out for a little bit until it softens. You don’t want it to be melted at all, just soft enough to squish.
Take your ice cream scoop & place one scoop of ice cream in the center of the cookie.
Then place half scoops around the center scoop, until it’s covered.
This was the best method I found of getting the ice cream equally distributed.
Place a second cookie on top and carefully squish (see I told you the ice cream needed to be squishable ;p) the ice cream down.
With the back of a spoon or other utensil, gently smooth out the ice cream edges.
Now, stick it in the freezer for about 30 minutes or so. Since I was making a big batch, I had my glass dishes lined with parchment paper ready to stick in the freezer. I would do a few sandwiches, then stick them in the freezer.
Before the sandwiches are ready to come out, pour your chocolate shell into a bowl.
You could use chocolate melts or semi-sweet chocolate but those were a little too thick for me. I didn’t want anyone hurting their teeth trying to eat it.
Take them out of the freezer and dip one end into the chocolate shell.
Sprinkle with sprinkles and stick them back in the freezer, with parchment/wax paper.
You don’t have to go with the waffle cookies. You could do chocolate chip or sugar cookies. You could even try a different kind of ice cream.
Although, I did try one of these & they were pretty delish!

This is so easy to make that I can do it and I’m horrible in the kitchen. I know my kids would enjoy it as well and it would save me quite a few dollars from buying the premade one. Best thing about this is that I can make it in any flavor I want. Thanks. Pinned. 🙂
