With school about to start or starting, now’s a good time to stock up on some great after-school snacks.
One classic after-school treat is the chocolate chip cookie. Feel good about this classic snack with this Healthy Gluten Free Chocolate Chip Cookie recipe.
You may recognize these cookies from my Back To School Party Ideas post last week.
This recipe is a favorite among my friends and it doesn’t use any refined sugar. It’s packed with vitamins & minerals…but still gives us our dose of chocolate. Personally, chocolate is part of my food pyramid…gotta get all those antioxidants in, right?!
Gluten Free Healthy Chocolate Chip Cookies

Let me explain a few of the ingredients for you:
Sucanat – Unrefined sugar found at Whole Foods, health food stores, & select grocery stores.
Ground Flax Seed – Full of omega-3 fatty acides, flax seed can be found in most grocery stores.
All Purpose Gluten Free Flour – This is pretty self-explanatory but I just wanted to add that I use Bob’s Red Mill GF Flour, in case you wanted a recommendation.
Xanthan Gum – This is used to thicken & bind the GF flour.
What I love about this recipe is that it makes a lot of cookies! The budget-friendly aspect of this is that you can provide healthy gluten free treats to a big crowd. I will also freeze my dough in 1″ balls so it’s ready to go at a moments notice.
If you’re not gluten free, just forget about the xanthan gum and substitute regular (or wheat) flour for the GF Flour.
I went gluten free last summer & it was one of the best decisions ever. I don’t want to bore you with the story but while I provide recipes for every diet, I try & include gluten free recipes every once & awhile too.
