The other day I asked on facebook if you would rather me feature an easy appetizer or a party project today. You said, “easy appetizer.” Since you’re the real rock star of this blog, I just have to say…in the words of Princess Bride, “…As you wish…”
Here’s an easy appetizer called, Apple & Brie Pastry Squares (technically it’s kind of a rectangle but that just doesn’t sound as cool as a square).
Brie is a favorite cheese of mine. It brings back some wonderful memories. About 5 years ago, my sister and I were able to go on a Mediterranean cruise. It was an incredible experience and a special time with my sister. Every night at dinner, we sat at a table with some very distinguished Englishmen (& women). The dinner was a better feast than I’ve ever had & we’d snack throughout the day so we could enjoy the dinner. There were COURSES! ;p One of our favorite courses was the cheese plate. Every night, there’d be at least one cheese that was from the region we were visiting the next day. Sophisticated, huh?
My sister & I come from very humble backgrounds. My parents are teachers & my mom stayed at home with the four kids as we were growing up. It felt so special for us to be savoring cheese plates & having a glass of wine after exploring Italy! It really was an amazing experience (BTW…we got the cruise & our plane ticket for less than we could’ve stayed at a place in Florida! It was such an amazing deal).
So…every time I enjoy a piece of brie or a cheese plate, I think of those memories…which is why I love this easy appetizer.
Here’s what you’ll need:

If you want to know which apples to use, I used gala apples & they still stayed a little crisp through the baking.
* Unroll the crescent rolls on a cookie sheet.
* Place sliced brie in center of crescent sheet. Allow room on all sides.
* Layer sliced apples (slice the apples really thin) on top of the brie.
* Sprinkle with walnuts.
* Fold over all four sides & bake according to the crescent roll package.
* Once it’s out of the oven, drizzle with honey.
This is the perfect fall appetizer. It’s so rich and warm.
You can assemble these ahead of time & just before guests arrive, pop them in the oven.
Another option is to do these without the apples. I honestly liked both ways.

Thanks Lisa! It’s definitely better served hot but I still liked it at room temp (however I LOVE me some brie so I’ll take it any way it comes ;p). These are so easy…you could make them up ahead of time and just before your guests arrive (or as they arrive) pop them in the oven & serve right away. <3 Heidi
