Hey party people!
It’s been a whirlwind couple of weeks. My in-laws have been in town from Vegas since last week, and on Saturday we threw a little luau party for my husband’s birthday. It turned out great, and I couldn’t have pulled off the party without my in-law’s help.
I’ll share more about the party in a few weeks, but today, I wanted to share the desserts I served. Mini desserts are a huge trend right now and I am on board. It’s the perfect way to satiate your sweet tooth without worry of getting a tummy ache. That is, of course, depending on how many mini desserts you end up sampling.
With a luau theme, I thought it only fitting that I serve some type of key lime dessert. These key lime pie mousse cups were perfect. I was able to make them in advance (thanks to help from my MIL Barbara) and just added the garnish at the last minute.
The recipe I used was from Changetable.com, found here. The only thing I did differently was use actual shortbreads, instead of Pecan Sandies (although those would’ve been cheaper) and I didn’t add butter to the crust because I didn’t bake it.
I simply crushed the shortbreads, packed them into the cups, and added the key lime mousse on top.
The recipe made 12 mini cups.
They were delicious, but a little time consuming. The second mini dessert I served was the BIG hit and took the least amount of time and ingredients.
This is such an easy recipe, and only requires 4 ingredients.
It’s light but decadent. Sweet but not too sweet. It’s got chocolate, but not too much chocolate…wait…is that possible? Having too much chocolate?
